Crockpot Japanese Onion Mushroom Soup

Japanese Onion Mushroom Soup

Good Morning!! I hope everyone enjoyed St Patty’s Day?! I know I did! I spent it with some great people and couldn’t have asked for more! I know I haven’t posted in a long time but I have been crazy busy with this move & starting work at a new location & on top of all that I got sick! 🙁 But I am now officially moved back to FL & feeling somewhat better lol. 

You know what helps though?? SOUP! So let’s get to this deliciousness I made!


Ingredients:

  • 2 Medium Carrots
  • 2 Medium Celery Stalks
  • Spinach, Optional
  • 2 Garlic Cloves
  • 6 Cups of water
  • 2 1/2 tablespoons of chicken granules
  • 1 Medium Onion
  • 8 Oz. Mushrooms
  • Green Onions [as many as you would like]

First I placed everything but the mushrooms into the crockpot. I know it said not to add the green onions till later but i wanted to do it my way and i LOVE green onions LOL. 

Cover and cook on high for 2-4 hours or low for 4-5 hours

Now with the veggies you can cut them up or keep them whole it is up to you! I cut them up only b/c i ate them later on 🙂 btw….YUMMY!

s/n: You can use actual chicken broth but i choose not too cause I like making it myself with the granules so it is up to you!

An hour before this ends, take out the veggies

 (I kept them and ate them later, you may do as you please!) 

Then add the mushrooms && more scallions ;] 

Cover & cook for another hour. 

I added a handful of spinach to it about 15mins before it was ready and it was amazing! But that it totally up to you!

And presto! You got amazing soup!!! 🙂
