As a child we all grew up thinking that vegetables were green, gross and gruesome. I know my parents couldn’t get me to eat them, even though they tried hard! Now that we’re older and our taste buds have definitely matured, we have started to see the joy in cooking with vegetables. I know I absolutely love them and try to put them in as many dishes as possible. The best part is that you don’t necessarily have to be a vegetarian eat these types of dishes on a regular basis. I am with WW formly Weight Watchers and I still eat everything I love (meat and all) but I see myself adding more and more vegetables to my dishes. There are so many varieties out there you don’t even know! From a pasta salad to a soulful soup, there is so much fun to be had with vibrant vegetables.
